Ingredients

The crab preparation

  • 2 pieces soft shell crabs
  • 1 cup all-purpose flour
  • 2 teaspoons Old Bay seasoning
  • ½ teaspoon black pepper
  • cup buttermilk or whole milk
  • 1 large egg
  • 1 teaspoon hot sauce
  • 1 tablespoon Italian parsley
  • 1 inch frying oil

The sandwich assembly

  • 2 pieces hamburger buns
  • 2 leaves lettuce
  • 2 large tomato slices
  • 2 tablespoons tartar sauce
  • 4 pieces pickle chips

Instructions

  1. Thaw the soft shell crabs if frozen and pat them dry.
  2. Combine flour, Old Bay seasoning, and black pepper in a shallow bowl.
  3. In another bowl, whisk together buttermilk, egg, hot sauce, and parsley.
  4. Dredge the crabs in the seasoned flour, then dip in the egg wash, and coat again in flour.
  5. Heat oil in a skillet over medium-high heat and fry the crabs for 3-4 minutes on each side until golden brown.
  6. Drain the fried crabs on paper towels.
  7. Assemble the sandwich by placing lettuce and tomato on the bun, adding the fried crab, tartar sauce, and pickles, then top with the other half of the bun.
