Ingredients

The pie dough

  • 2 ½ cups all-purpose flour
  • 2 tablespoons granulated sugar
  • ½ teaspoon salt
  • 1 cup cold unsalted butter, cut into small pieces
  • ¼ cup cold water
  • 2 tablespoons cold water

The filling

  • 2 cups chopped strawberries
  • 1 tablespoon granulated sugar
  • 1 teaspoon cornstarch
  • 1 cup chopped dark chocolate
  • 2 tablespoons heavy cream

Finishing touches

  • 1 large egg, beaten
  • 1 tablespoon water
  • to taste Turbinado sugar for sprinkling on pies

Instructions

  1. Prepare the pie dough by mixing flour, sugar, and salt in a stand mixer, then add butter until the mixture resembles small peas.
  2. Add cold water gradually until the dough comes together, then refrigerate for at least 30 minutes.
  3. Preheat the oven to 400°F and prepare baking sheets with parchment paper.
  4. Combine strawberries, sugar, and cornstarch in a bowl and stir until well coated.
  5. Roll out the dough into squares, fill with strawberries and dark chocolate, and seal the edges.
  6. Brush with egg wash and sprinkle with turbinado sugar.
  7. Cut vents on top of each pie and bake for 20 minutes until golden brown.
  8. Cool on a wire rack before serving.
