Strawberry Chocolate Hand Pies

Turbinado sugar for sprinkling on pies
Instructions
- Prepare the pie dough by mixing flour, sugar, and salt in a stand mixer, then add butter until the mixture resembles small peas.
- Add cold water gradually until the dough comes together, then refrigerate for at least 30 minutes.
- Preheat the oven to 400°F and prepare baking sheets with parchment paper.
- Combine strawberries, sugar, and cornstarch in a bowl and stir until well coated.
- Roll out the dough into squares, fill with strawberries and dark chocolate, and seal the edges.
- Brush with egg wash and sprinkle with turbinado sugar.
- Cut vents on top of each pie and bake for 20 minutes until golden brown.
- Cool on a wire rack before serving.
