Instructions
- 1. Turn on the Instant Pot to the Sauté function and cook the bacon until mostly done, then remove excess fat.
- 2. Add the onion and cook for a couple of minutes.
- 3. Add garlic, bay leaf, cumin, paprika, oregano, chili powder, salt, pepper, and coriander powder, stirring frequently.
- 4. Add the broth and stir.
- 5. Add the beans and stir.
- 6. Lock the lid in place and set the steam release knob to Sealing.
- 7. Cancel the Sauté function and set the Pressure Cook time to 35 minutes.
- 8. After cooking, let the pot sit for 15 minutes for natural release, then release any remaining pressure.
- 9. Open the lid, stir the beans, and adjust salt if needed.
- 10. Garnish as desired and serve.
