Ingredients

The main ingredients

  • 3 slices Bacon, chopped
  • ½ small Onion, diced
  • 3 cloves Garlic, pressed or finely minced
  • 1 small Bay Leaf
  • 2 tsp Cumin
  • ½ tsp Smoked Paprika
  • 1 ½ tsps Mexican Oregano
  • 1 tsp Chili Powder
  • ¼ tsp Kosher Salt
  • ¼ tsp Black Pepper
  • ½ tsp Coriander Powder
  • 3 cups Chicken or Vegetable Broth, low sodium
  • 1 cup Dry Black Beans, sorted & rinsed

Garnish (optional)

  • to taste Sour Cream
  • to taste Fresh Cilantro
  • to taste Salsa
  • to taste Cotija or other Cheese
  • to taste Hot Sauce

Instructions

  1. 1. Turn on the Instant Pot to the Sauté function and cook the bacon until mostly done, then remove excess fat.
  2. 2. Add the onion and cook for a couple of minutes.
  3. 3. Add garlic, bay leaf, cumin, paprika, oregano, chili powder, salt, pepper, and coriander powder, stirring frequently.
  4. 4. Add the broth and stir.
  5. 5. Add the beans and stir.
  6. 6. Lock the lid in place and set the steam release knob to Sealing.
  7. 7. Cancel the Sauté function and set the Pressure Cook time to 35 minutes.
  8. 8. After cooking, let the pot sit for 15 minutes for natural release, then release any remaining pressure.
  9. 9. Open the lid, stir the beans, and adjust salt if needed.
  10. 10. Garnish as desired and serve.
