One-bowl Small-batch Sugar Cookies

Ingredients

The cookie dough

  • cup salted butter, softened
  • cup granulated sugar
  • 1 large egg yolk
  • ½ teaspoon vanilla extract or ⅛ teaspoon almond extract
  • ¾ cup + 1 tablespoon all-purpose flour
  • ¼ teaspoon baking soda
  • teaspoon salt
  • cup powdered sugar, granulated sugar or sprinkles for rolling (optional)

The optional glaze

  • 1 cup powdered sugar, sifted
  • 1 tablespoon milk
  • ¼ teaspoon vanilla extract
  • 2 teaspoons light corn syrup
  • 2 to 4 teaspoons food coloring (optional)

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, cream together the butter and sugar until light and fluffy.
  3. Add the egg yolk and vanilla (or almond extract) and mix until well combined.
  4. Stir in the flour, baking soda, and salt until there is no dry flour left and the dough begins to clump.
  5. Divide the dough into six parts and roll each into a ball. If desired, roll in sprinkles or sugar.
  6. Place the dough on the prepared baking sheet, well-spaced, and press each cookie to about ½-inch thick.
  7. Bake for 9 to 12 minutes until the edges are lightly golden.
  8. Cool completely on the baking sheet.
  9. For the glaze, combine powdered sugar, milk, and vanilla in a bowl and stir until smooth.
  10. Add corn syrup and mix until uniform. If desired, add food coloring.
  11. Spoon the glaze over the cooled cookies and allow to set for 10 to 15 minutes before serving.
