One-bowl Small-batch Sugar Cookies

Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper or a silicone baking mat.
- In a medium bowl, cream together the butter and sugar until light and fluffy.
- Add the egg yolk and vanilla (or almond extract) and mix until well combined.
- Stir in the flour, baking soda, and salt until there is no dry flour left and the dough begins to clump.
- Divide the dough into six parts and roll each into a ball. If desired, roll in sprinkles or sugar.
- Place the dough on the prepared baking sheet, well-spaced, and press each cookie to about ½-inch thick.
- Bake for 9 to 12 minutes until the edges are lightly golden.
- Cool completely on the baking sheet.
- For the glaze, combine powdered sugar, milk, and vanilla in a bowl and stir until smooth.
- Add corn syrup and mix until uniform. If desired, add food coloring.
- Spoon the glaze over the cooled cookies and allow to set for 10 to 15 minutes before serving.
