Ingredients

The bruschetta

  • 3 medium firm tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon fine sea salt
  • ¼ teaspoon ground black pepper
  • 1 loaf vegan focaccia
  • 1 clove garlic

The balsamic glaze

  • ½ cup balsamic vinegar
  • 2 tablespoons sugar
  • ½ teaspoon fine sea salt
  • ¼ teaspoon ground black pepper
  • to taste herbs

Instructions

  1. Dice the tomatoes and combine them with olive oil, salt, and pepper in a bowl.
  2. Slice the focaccia and toast the slices for about 3 minutes, then rub with garlic.
  3. In a pot, combine the balsamic vinegar, sugar, salt, and pepper, and bring to a boil over medium-high heat, stirring until thickened.
  4. Top the toasted bread with the tomato mixture and drizzle with the balsamic glaze. Garnish with herbs and serve.
