Ingredients

The cookies

  • 1 cup unsalted butter, softened to room temperature

  • 1 large egg yolk, at room temperature
  • 2 teaspoons pure vanilla extract
  • 3 cups all-purpose flour (spooned & leveled)
  • teaspoons baking soda
  • ½ teaspoon cream of tartar
  • 1 teaspoon cornstarch
  • ½ teaspoon salt
  • 1 cup sprinkles, plus more for decor on top of frosting

The frosting

  • ¾ cup unsalted butter, softened to room temperature
  • cups confectioners’ sugar
  • 3 tablespoons heavy cream or half-and-half
  • 1 teaspoon pure vanilla extract
  • teaspoon salt

Instructions

  1. Cream the softened butter and sugar until fluffy, then add the egg, egg yolk, and vanilla.
  2. In a separate bowl, whisk together the dry ingredients, then gradually mix them into the wet mixture.
  3. Gently fold in the sprinkles and chill the dough for at least 3 hours.
  4. Preheat the oven and roll the dough into balls before placing them on lined cookie sheets.
  5. Bake until the edges are slightly browned and the centers are soft, then cool on wire racks.
  6. For the frosting, beat the butter until creamy, then mix in the sugar, cream, vanilla, and salt until fluffy.
  7. Frost the cooled cookies and decorate with additional sprinkles.
