Sprinkle Slice & Bake Cookies

Instructions
- Beat the softened butter until smooth, then add brown sugar and beat until fluffy.
- Mix in the egg, vanilla, and almond extracts until fully combined.
- Gradually add the flour and salt, mixing until thick and slightly sticky.
- Stir in the sprinkles, then divide the dough and shape into two logs.
- Wrap the logs tightly in plastic wrap and chill in the refrigerator for at least 4 hours.
- Preheat the oven to 350°F (177°C) and prepare baking sheets.
- Roll the chilled logs in coarse sugar if desired, then slice into cookies.
- Bake for 12-14 minutes until edges are brown, then cool slightly.
- Melt the white chocolate and dip the cooled cookies, topping with more sprinkles.
