Soft-Baked Sprinkle Sugar Cookies

Instructions
- Whisk together the flour, baking powder, baking soda, cream of tartar, and salt in a medium bowl and set aside.
- In a large bowl, beat the softened butter and granulated sugar until creamy, then add the egg and vanilla and mix until combined.
- Add the dry ingredients to the wet ingredients and mix until combined, then fold in the sprinkles.
- Scoop large sections of dough, roll into balls, and optionally dip the tops in more sprinkles.
- Chill the dough balls in the refrigerator for at least 2 hours.
- Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
- Arrange the chilled dough balls on the baking sheets and bake for 11-12 minutes until lightly browned on the sides.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
