Instructions
- Preheat the oven to 350°F and line baking sheets with parchment paper.
- Whisk together flour, baking powder, baking soda, and salt in a bowl and set aside.
- In a stand mixer, blend butter, sugar, and cream cheese until combined.
- Add the egg, vanilla extract, and almond extract, and mix well.
- Incorporate the flour mixture until combined, chilling the dough if it's too sticky.
- Place sprinkles in a bowl.
- Scoop dough into 1 ½ tablespoon portions, shape into balls, and roll in sprinkles.
- Transfer to baking sheets, spacing them 2 inches apart, and flatten each cookie slightly.
- Bake for about 9 minutes until slightly under-baked, then cool on the baking sheet before transferring to a wire rack.
