Ingredients

The cookie base

  • 2 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • 1 cup unsalted butter
  • 1 ¼ cups granulated sugar
  • 2 oz cream cheese
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp almond extract

The sprinkles

  • ¾ - 1 cup sprinkles

Instructions

  1. Preheat the oven to 350°F and line baking sheets with parchment paper.
  2. Whisk together flour, baking powder, baking soda, and salt in a bowl and set aside.
  3. In a stand mixer, blend butter, sugar, and cream cheese until combined.
  4. Add the egg, vanilla extract, and almond extract, and mix well.
  5. Incorporate the flour mixture until combined, chilling the dough if it's too sticky.
  6. Place sprinkles in a bowl.
  7. Scoop dough into 1 ½ tablespoon portions, shape into balls, and roll in sprinkles.
  8. Transfer to baking sheets, spacing them 2 inches apart, and flatten each cookie slightly.
  9. Bake for about 9 minutes until slightly under-baked, then cool on the baking sheet before transferring to a wire rack.
