Sweet & Spicy Roasted Party Nuts

finely snipped or chopped fresh rosemary (optional)
The coating

maple syrup

unsalted butter, melted

Instructions
- Preheat the oven to 325°F and prepare a baking sheet with parchment paper.
- Combine the optional rosemary, maple syrup, melted butter, salt, vanilla, and cayenne in a bowl and whisk until blended.
- Pour the mixture over the nuts on the baking sheet and stir to coat them evenly.
- Spread the nuts in a single layer and bake, stirring every 5 minutes, until golden and the syrup is mostly gone, about 23 to 26 minutes.
- Remove from the oven, stir again, and let cool for about 10 minutes before separating any clumps.
- Allow the nuts to cool completely on the pan.
