Toasted Pecan Toffee

Ingredients

The toffee

  • 1 cup butter
  • cups granulated sugar
  • 3 tablespoons corn syrup
  • 3 tablespoons water
  • 2 cups well-chopped pecans, toasted

The chocolate coating

  • ½ pound chocolate, cut into chunks

Instructions

  1. Prepare a baking sheet with parchment paper.
  2. In a saucepan, melt the butter over medium heat, then stir in the sugar, corn syrup, and water.
  3. Cook the mixture until it bubbles and reaches 300°F on a candy thermometer.
  4. Remove from heat and mix in 1 cup of toasted pecans.
  5. Pour the toffee onto the prepared baking sheet and spread it into a round shape.
  6. Allow the toffee to cool.
  7. Melt half of the chocolate and spread it over the cooled toffee, then sprinkle with ½ cup of pecans.
  8. After 20 minutes, flip the toffee and spread the remaining melted chocolate on the other side, topping with the remaining pecans.
  9. Let cool completely before breaking into pieces.
