Ingredients

Garlic Aioli

  • 1 head garlic
  • ¾ cup raw cashews
  • 2 cloves garlic, minced
  • 1 Tbsp avocado or olive oil
  • cup water
  • to taste salt + pepper

Burgers

  • 4 medium-large portobello mushrooms
  • 3 Tbsp avocado or olive oil
  • ¼ cup balsamic vinegar
  • 1 Tbsp Italian seasoning
  • 2 cloves garlic, minced
  • 1 pinch salt
  • 1 pinch black pepper

Caramelized Onions

  • 1 Tbsp avocado or olive oil
  • 1 medium white or yellow onion

For Serving

  • 4 whole wheat hamburger buns
  • 2 ripe tomatoes, sliced
  • to taste lettuce or greens

Instructions

  1. Preheat the oven to 400°F (204°C) and prepare the garlic for roasting.
  2. Soak the cashews in boiling water for 1 hour, then drain and rinse.
  3. Clean the portobello mushrooms and marinate them in a mixture of oil, balsamic vinegar, Italian seasoning, minced garlic, salt, and pepper for at least 30 minutes.
  4. Roast the garlic in the oven for 1 hour, then extract the softened garlic.
  5. Blend the soaked cashews with the roasted garlic, fresh garlic, oil, water, and seasonings until smooth to make the aioli.
  6. Caramelize the sliced onions in a skillet with oil and salt until golden brown.
  7. Cook the marinated portobello mushrooms in a skillet or on a grill for 3-6 minutes on each side until golden brown.
  8. Assemble the burgers by spreading aioli on the buns, adding the mushrooms, caramelized onions, and optional toppings like tomatoes and greens.
