Instructions
- Preheat the oven to 400°F (204°C) and prepare the garlic for roasting.
- Soak the cashews in boiling water for 1 hour, then drain and rinse.
- Clean the portobello mushrooms and marinate them in a mixture of oil, balsamic vinegar, Italian seasoning, minced garlic, salt, and pepper for at least 30 minutes.
- Roast the garlic in the oven for 1 hour, then extract the softened garlic.
- Blend the soaked cashews with the roasted garlic, fresh garlic, oil, water, and seasonings until smooth to make the aioli.
- Caramelize the sliced onions in a skillet with oil and salt until golden brown.
- Cook the marinated portobello mushrooms in a skillet or on a grill for 3-6 minutes on each side until golden brown.
- Assemble the burgers by spreading aioli on the buns, adding the mushrooms, caramelized onions, and optional toppings like tomatoes and greens.
