Fresh Mint Tea

very loosely packed fresh mint leaves

boiling water
Instructions
- Muddle the mint leaves in a mortar and pestle until they are broken down to about half their size, or rub them between your palms.
- Transfer the muddled mint to a heat-proof jar and pour boiling water over it.
- Cover the jar with a lid or small plate and let it steep for 5 minutes.
- Strain the tea and serve hot or pour over ice.
