Ingredients

The salad

  • 8 ounces fusilli pasta
  • 1 cup cherry tomatoes
  • 1 large red onion
  • 1 medium cucumber
  • ¼ cup black olives
  • 1 large red bell pepper
  • ½ cup feta cheese
  • 2 tablespoons fresh parsley

The dressing

  • 1 clove garlic
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • teaspoon black pepper
  • 1 small lemon
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1 tablespoon Dijon mustard

Instructions

  1. Cook the pasta until al dente according to package directions, then drain and transfer to a large bowl.
  2. Whisk together the dressing ingredients in a small bowl until combined.
  3. Add the cherry tomatoes, red onion, cucumber, black olives, and red bell pepper to the pasta bowl.
  4. Pour the dressing over the salad and toss to combine.
  5. Crumble the feta cheese over the top and sprinkle with fresh parsley before serving.
