Ingredients

The batter

  • 1 cup baby spinach
  • ½ cup unsweetened almond milk
  • ½ cup plain Greek yogurt
  • ¼ cup egg whites
  • 1 teaspoon vanilla extract
  • 1 cup oat flour
  • 2 tablespoons granulated sweetener
  • ¾ teaspoon cinnamon
  • ¾ teaspoon sea salt
  • teaspoons baking powder
  • ½ cup rolled oats

The toppings

  • cup walnuts

Instructions

  1. Blend spinach, almond milk, yogurt, egg whites, and vanilla until liquefied.
  2. Add oat flour, sweetener, cinnamon, salt, and baking powder; blend until combined.
  3. Stir in rolled oats and walnuts; let the batter rest for 10 minutes.
  4. Heat a non-stick skillet over medium-low and grease it.
  5. Pour a scant ¼ cup of batter into the skillet; cook until bubbles form.
  6. Flip and cook until golden brown and set through.
  7. Repeat with remaining batter and serve with desired toppings.
