Spinach Pancakes

Ingredients

  • 2 large eggs
  • 1 ripe banana
  • 2 tablespoons maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon vanilla extract
  • 1 cup fresh baby spinach
  • ¼ cup milk of choice
  • cups old fashioned rolled oats
  • 2 teaspoons baking powder
  • ¼ teaspoon fine sea salt

Instructions

  1. Blend the eggs, banana, maple syrup, oil, vanilla extract, spinach, and milk until smooth.
  2. Add the rolled oats, baking powder, and salt, then blend again until smooth.
  3. Set the batter aside to thicken while heating a griddle or skillet over medium heat.
  4. Grease the pan and pour a ¼ cup of batter for each pancake, spreading it out if thick.
  5. Cook until bubbles appear on top, then flip and cook the other side until done.
  6. Repeat with the remaining batter, making approximately 10 pancakes.
  7. Serve warm with your favorite toppings.
