Spicy Chipotle Shredded Chicken

Instructions
- Mince the chipotle peppers and garlic cloves.
- Heat oil in a large pot over medium heat, then add garlic and chipotle, sautéing for 1-2 minutes.
- Add orange juice, chicken broth, beer, and cilantro, bringing to a boil.
- Add raw chicken breasts, cover, and reduce heat to medium-low, simmering for 15-20 minutes until cooked through.
- Remove chicken from pot and shred it with two forks.
- Keep the sauce over low heat, whisk in mustard, and reduce until thickened.
- Add shredded chicken back to the pot with the sauce and toss to combine.
