Ingredients

Smoky Maple Almond Bits

  • 1 cup sliced almonds
  • ¾ teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon fine sea salt
  • 2 teaspoons olive oil
  • 2 teaspoons maple syrup
  • 1 teaspoon tamari soy sauce
  • 1-2 drops liquid smoke (optional)

Roasted Brussels Sprouts

  • 2 lbs Brussels sprouts
  • 3 tablespoons olive oil
  • to taste sea salt
  • to taste ground black pepper
  • 2 teaspoons maple syrup
  • ½ teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 small clove garlic, finely grated

Instructions

  1. Preheat the oven to 300°F and line one baking sheet with parchment paper.
  2. Mix smoked paprika, onion powder, salt, olive oil, maple syrup, tamari, and liquid smoke in a bowl.
  3. Coat the almonds with the mixture and spread them on the lined baking sheet, baking for 20-25 minutes until golden brown.
  4. Raise the oven temperature to 425°F and trim the Brussels sprouts, cutting them in half.
  5. Coat the halved Brussels sprouts with olive oil, salt, and pepper on another baking sheet.
  6. Roast the Brussels sprouts for 20-25 minutes until golden brown and tender, stirring halfway through.
  7. Whisk together maple syrup, Dijon mustard, lemon juice, and garlic in a bowl.
  8. Toss the hot Brussels sprouts with the mixture and sprinkle with smoky almond bits before serving.
