Sweet and Spicy Almond Butter Roasted Brussels Sprouts

Ingredients

The Brussels sprouts

  • 12 oz Brussels sprouts, ends removed and quartered

The sauce

  • cup almond butter (the drippy kind)
  • 1 tbsp extra virgin olive oil
  • 1 tbsp water
  • 1 tbsp pure maple syrup
  • 2 tsp sriracha
  • 1 tsp apple cider vinegar
  • ½ tsp fine sea salt
  • to taste freshly ground black pepper

Instructions

  1. Preheat the oven to 375°F and prepare a baking sheet.
  2. In a large bowl, whisk together almond butter, water, maple syrup, sriracha, vinegar, salt, and pepper.
  3. Add the Brussels sprouts to the bowl and toss well to coat them.
  4. Spread the Brussels sprouts on the baking sheet in an even layer, cut-side down.
  5. Bake for 20 minutes, tossing halfway through, until crispy.
