Instructions
- Freeze cubed watermelon on a parchment-lined baking sheet for 3-4 hours.
- Blend the remaining watermelon (without rind) until smooth, optionally strain for juice.
- Combine frozen watermelon, coconut milk, lime juice, and watermelon juice in a blender.
- Blend until creamy and smooth, adjusting consistency with more watermelon juice if needed.
- Taste and adjust flavors with more coconut milk, lime juice, salt, or sweetener.
- Serve in watermelon rinds or chilled glasses, garnished with a lime wedge.
