Ingredients

The slushie

  • 4 cups frozen watermelon
  • 1/3 cup light coconut milk
  • 1 medium lime (juiced)
  • 1/2 cup watermelon juice (plus more to ease blending)
  • 1 Tbsp sweetener of choice (optional)
  • 1 pinch sea salt (optional)

The watermelon juice

  • 1 small seedless watermelon (cubed)

Instructions

  1. Freeze cubed watermelon on a parchment-lined baking sheet for 3-4 hours.
  2. Blend the remaining watermelon (without rind) until smooth, optionally strain for juice.
  3. Combine frozen watermelon, coconut milk, lime juice, and watermelon juice in a blender.
  4. Blend until creamy and smooth, adjusting consistency with more watermelon juice if needed.
  5. Taste and adjust flavors with more coconut milk, lime juice, salt, or sweetener.
  6. Serve in watermelon rinds or chilled glasses, garnished with a lime wedge.
