Instructions
- Preheat the oven to 425°F.
- Slice the potato and carrots lengthwise into thin pieces.
- Place the vegetables on a baking sheet, drizzle with olive oil, and season with salt and pepper.
- Roast the vegetables for 10-15 minutes, flipping when they start browning, until tender-crisp.
- Heat a skillet or griddle to 400°F.
- Slice the cheese and butter the outside of the bread.
- Layer cheese, roasted vegetables, and more cheese between the slices of bread.
- Grill the sandwich for 5-10 minutes until the cheese is melted and the bread is browned and crispy.
