Balsamic Roasted Broccoli and Red Pepper Grilled Cheese

Ingredients

Roasted vegetables

  • 1 pound broccoli
  • 1 each red bell pepper
  • 1 small yellow onion
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • ¼ teaspoon salt
  • pinch red pepper flakes (optional)
  • to taste freshly ground black pepper

Sandwiches

  • 8 slices quality whole grain bread
  • 8 ounces shredded cheddar cheese
  • 1 to 2 teaspoons Dijon mustard
  • 1+ tablespoons butter

Instructions

  1. Preheat the oven to 425°F and prepare the vegetables by cutting them into even sizes.
  2. Place the vegetables on a baking sheet, drizzle with olive oil and balsamic vinegar, and season with salt and pepper.
  3. Bake the vegetables for about 20 minutes, tossing halfway through until tender and caramelized.
  4. Assemble the sandwiches by spreading Dijon mustard on one slice of bread, adding cheese and roasted vegetables, and topping with another slice of bread.
  5. Heat a skillet over medium heat, melt butter, and cook the sandwiches until golden brown and the cheese is melted, flipping as needed.
