Instructions
- Preheat the oven to 425°F and prepare the vegetables by cutting them into even sizes.
- Place the vegetables on a baking sheet, drizzle with olive oil and balsamic vinegar, and season with salt and pepper.
- Bake the vegetables for about 20 minutes, tossing halfway through until tender and caramelized.
- Assemble the sandwiches by spreading Dijon mustard on one slice of bread, adding cheese and roasted vegetables, and topping with another slice of bread.
- Heat a skillet over medium heat, melt butter, and cook the sandwiches until golden brown and the cheese is melted, flipping as needed.
