Roasted Broccoli Grilled Cheese

Ingredients

The filling

  • 1 medium head broccoli
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon freshly cracked black pepper
  • 1 cup cheddar cheese

The bread

  • 6 to 8 slices bread
  • unsalted butter softened

Instructions

  1. Preheat the oven to 400°F.
  2. Mix the chopped broccoli, olive oil, salt, and pepper on a sheet pan and roast for 8 to 10 minutes until evenly roasted.
  3. Allow the roasted broccoli to cool.
  4. Heat a skillet over medium-low heat.
  5. Spread butter on one side of each slice of bread.
  6. On the unbuttered side of half the bread slices, layer cheese, then add the roasted broccoli, followed by more cheese.
  7. Top with another slice of bread, butter side out.
  8. Grill the sandwiches in the skillet, turning once, until the cheese melts and the bread is toasted.
