Roasted Broccoli Grilled Cheese

Instructions
- Preheat the oven to 400°F.
- Mix the chopped broccoli, olive oil, salt, and pepper on a sheet pan and roast for 8 to 10 minutes until evenly roasted.
- Allow the roasted broccoli to cool.
- Heat a skillet over medium-low heat.
- Spread butter on one side of each slice of bread.
- On the unbuttered side of half the bread slices, layer cheese, then add the roasted broccoli, followed by more cheese.
- Top with another slice of bread, butter side out.
- Grill the sandwiches in the skillet, turning once, until the cheese melts and the bread is toasted.
