Ingredients

The nuts and syrup mixture

  • 3 ½ cups unsalted nuts (e.g. pistachios, walnuts, cashews)
  • cup maple syrup
  • ¼ tsp salt
  • 2 tbs coconut oil
  • 1 tbs water
  • 1 tsp vanilla extract

The mix-ins

  • 2 cups whole wheat pretzels
  • ½ cup chopped dried apricots
  • ½ cup raisins

Instructions

  1. Place the nuts in a slow cooker.
  2. In a small bowl, mix the maple syrup, salt, coconut oil, water, and vanilla extract.
  3. Pour the mixture over the nuts in the slow cooker.
  4. Cook on low for 1 ½ to 2 hours, stirring every 15 minutes until the nuts are brown and the liquid is absorbed.
  5. Transfer the nuts to a foil-lined baking sheet to cool.
  6. In a large bowl, combine the cooled nuts, pretzels, and dried fruit.
  7. Store in an airtight container for up to 5 days.
