Green Pea Curry Hummus

garlic (skin removed and slightly smashed/crushed)

finely minced or grated ginger

chickpeas (rinsed and drained)

green curry paste

chopped fresh cilantro

Instructions
- Steam and cool the green peas.
- Sauté shallot and garlic in olive oil until softened and slightly browned.
- In a food processor, combine olive oil, ginger, chickpeas, curry paste, tahini, lemon juice, lime juice, salt, cilantro, and the sautéed shallot and garlic. Blend until mostly smooth.
- Adjust seasonings as needed, adding more curry paste, ginger, lemon or lime juice, salt, or cilantro to taste.
- Add the peas and mix gently to keep them whole, or pulse a few times to chop them slightly.
- Serve with a drizzle of olive oil and additional cilantro.
