Green Pea Curry Hummus

Ingredients

The hummus

  • ½ cup frozen green peas (steamed and cooled)
  • 2 Tbsp olive oil (divided)
  • 2 medium shallots (minced)
  • 4 large cloves garlic (skin removed and slightly smashed/crushed)
  • 1 tsp finely minced or grated ginger
  • 1 15-ounce can chickpeas (rinsed and drained)
  • 2 Tbsp green curry paste
  • ¼ cup tahini
  • Tbsp lemon juice
  • Tbsp lime juice
  • ½ tsp sea salt
  • ½ cup chopped fresh cilantro

For serving

  • to taste crackers (gluten-free, if needed)
  • to taste pita or pita chips
  • to taste freshly sliced vegetables

Instructions

  1. Steam and cool the green peas.
  2. Sauté shallot and garlic in olive oil until softened and slightly browned.
  3. In a food processor, combine olive oil, ginger, chickpeas, curry paste, tahini, lemon juice, lime juice, salt, cilantro, and the sautéed shallot and garlic. Blend until mostly smooth.
  4. Adjust seasonings as needed, adding more curry paste, ginger, lemon or lime juice, salt, or cilantro to taste.
  5. Add the peas and mix gently to keep them whole, or pulse a few times to chop them slightly.
  6. Serve with a drizzle of olive oil and additional cilantro.
