Ingredients

Cookie Dough

  • ½ cup unsalted butter, softened to room temperature
  • ½ cup packed light or dark brown sugar
  • ¼ cup granulated sugar
  • 2 Tablespoons milk or cream
  • 1 teaspoon pure vanilla extract
  • 1 ¼ cups heat-treated all-purpose flour
  • teaspoon salt
  • 1 cup mini chocolate chips

Oreo Cookie Crust

  • 22 pieces regular Oreo cookies
  • 5 Tablespoons unsalted butter, melted

Filling

  • 1 quart vanilla ice cream, softened
  • 1 8-ounce container frozen whipped topping (Cool Whip), thawed

Instructions

  1. Prepare the cookie dough by mixing butter, sugars, milk, and vanilla until creamy.
  2. Add flour and salt, mixing until combined, then fold in ½ cup mini chocolate chips.
  3. Roll the cookie dough into small balls and freeze them.
  4. Make the crust by crushing Oreos and mixing with melted butter, then press into a springform pan.
  5. Combine Cool Whip and softened ice cream until smooth, then mix in ¾ of the cookie dough balls.
  6. Pour the filling into the crust, topping with remaining cookie dough and mini chocolate chips.
  7. Freeze for 4-6 hours or overnight before serving.
