Ingredients

The batter

  • 3 cups all-purpose flour
  • 1 cup sugar-free sweetener
  • 4 teaspoons baking powder
  • ¼ teaspoon sea salt
  • 1 tablespoon cinnamon
  • ½ cup unsweetened applesauce
  • cups milk

The mix-ins

  • cups blueberries

Instructions

  1. Preheat the oven to 200C/400F and line a muffin pan with liners.
  2. Mix all dry ingredients in a bowl.
  3. Add wet ingredients except blueberries and mix until smooth.
  4. Gently fold in the blueberries.
  5. Distribute the batter evenly into the muffin liners.
  6. Bake for 25-30 minutes or until a skewer comes out clean.
  7. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
