Sesame Noodles with Swiss Chard and Chicken

Ingredients

The main ingredients

  • 8 ounces boneless skinless chicken breast
  • 8 ounces dried fettuccine
  • 6 ounces Swiss chard, leaves removed from stems, torn into small pieces

The sauce

  • 2 teaspoons sesame oil
  • ¼ cup peanut oil
  • ¼ cup well-stirred tahini
  • 3 tablespoons soy sauce
  • 2 tablespoons red wine vinegar
  • 2 teaspoons chili oil
  • 1 teaspoon honey
  • ½ teaspoon cayenne pepper, optional
  • 1 clove garlic, minced
  • 6 scallions thinly sliced
  • to taste Kosher salt

Instructions

  1. Boil water in a large saucepan, salt it, and add the chicken breast. Cover and let it sit off the heat for about 15 minutes.
  2. Check the chicken for doneness, returning it to the water if necessary. Remove the chicken and let it rest.
  3. Bring the water back to a boil and cook the fettuccine according to package directions. Place the chard in a colander.
  4. In a small bowl, whisk together the sauce ingredients until smooth.
  5. Drain the pasta over the chard and transfer to a large bowl. Toss with sesame oil.
  6. Shred the chicken and add it to the bowl with noodles and chard. Add scallions and sauce, then toss to combine.
  7. Serve immediately.
