Sesame Chicken with Quinoa

Ingredients

The chicken

  • 2 pieces boneless, skinless chicken breasts, cut into 1-inch pieces
  • to taste salt and pepper
  • 1 Tbsp. olive oil
  • 3 Tbsp. reduced-sodium soy sauce
  • 2 Tbsp. rice wine vinegar
  • 2 Tbsp. honey
  • 1 clove garlic, minced
  • ½ tsp. ground ginger
  • 1 tsp. cornstarch
  • ½ cup thinly sliced green onions
  • 2 tsp. sesame oil
  • 1 tsp. toasted sesame seeds

The quinoa

  • 1 cup dry quinoa
  • 2 cups chicken broth

Instructions

  1. 1. Season the chicken with salt and pepper.
  2. 2. Heat olive oil in a large sauté pan over medium-high heat and sauté the chicken for about 4-6 minutes until cooked through.
  3. 3. While the chicken is cooking, whisk together soy sauce, rice wine vinegar, honey, garlic, ginger, and cornstarch.
  4. 4. Once the chicken is cooked, add the green onions and the sauce mixture to the pan, stirring to coat the chicken.
  5. 5. Stir in sesame oil, remove from heat, and serve over cooked quinoa, garnished with sesame seeds.
