Sesame Chicken with Quinoa

Instructions
- 1. Season the chicken with salt and pepper.
- 2. Heat olive oil in a large sauté pan over medium-high heat and sauté the chicken for about 4-6 minutes until cooked through.
- 3. While the chicken is cooking, whisk together soy sauce, rice wine vinegar, honey, garlic, ginger, and cornstarch.
- 4. Once the chicken is cooked, add the green onions and the sauce mixture to the pan, stirring to coat the chicken.
- 5. Stir in sesame oil, remove from heat, and serve over cooked quinoa, garnished with sesame seeds.
