Italian Herb and Cheese Chicken Bites

Instructions
- Preheat the oven to 425 degrees.
- Spray a large non-stick baking sheet with cooking spray.
- Cut the chicken breasts into 1 inch cubes.
- Set up a breading station with flour in the first bowl, whisked egg in the second bowl, and a mixture of bread crumbs and cheese in the third bowl.
- Dredge each chicken bite in flour, then egg, and then the bread crumbs.
- Place the breaded chicken bites on the baking sheet.
- Spray the tops of the chicken bites with more cooking spray.
- Bake at 425 degrees for 10 minutes, flip the bites, and then cook for another 10 minutes.
- Check throughout as cooking time may vary.
- Sprinkle with sea salt and fresh parsley before serving. Serve with marinara for dipping.
