Italian Herb and Cheese Chicken Bites

Ingredients

  • 2 large Chicken Breasts, cut into 1 inch cubes
  • 1 large egg, whisked with 1 tbsp. of water
  • 1 cup All Purpose Flour
  • cups Panko Bread Crumbs
  • ½ cup Parmesan cheese, grated
  • as needed none Cooking Spray

Instructions

  1. Preheat the oven to 425 degrees.
  2. Spray a large non-stick baking sheet with cooking spray.
  3. Cut the chicken breasts into 1 inch cubes.
  4. Set up a breading station with flour in the first bowl, whisked egg in the second bowl, and a mixture of bread crumbs and cheese in the third bowl.
  5. Dredge each chicken bite in flour, then egg, and then the bread crumbs.
  6. Place the breaded chicken bites on the baking sheet.
  7. Spray the tops of the chicken bites with more cooking spray.
  8. Bake at 425 degrees for 10 minutes, flip the bites, and then cook for another 10 minutes.
  9. Check throughout as cooking time may vary.
  10. Sprinkle with sea salt and fresh parsley before serving. Serve with marinara for dipping.
