Ingredients

Chicken Parmesan Bites

  • 2 lbs Just BARE Chicken Tenders, cut into ½” cubes
  • 1 cup gluten free panko breadcrumbs
  • ¾ cup shredded parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dry basil
  • 1 teaspoon dry parsley
  • 1 teaspoon dry oregano
  • ½ cup egg whites

Marinara Sauce

  • 2 cloves garlic, minced
  • ½ cup diced yellow onion
  • 1 tablespoon grape seed oil
  • 28 oz crushed tomatoes with basil
  • ¼ cup basil, chiffonade

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a small bowl, add the egg whites and set aside.
  3. In a medium bowl, combine panko breadcrumbs, parmesan cheese, garlic powder, basil, parsley, and oregano; stir gently.
  4. Set up a station with chicken tenders, egg whites, panko mixture, and baking sheet.
  5. Coat chicken tenders in egg whites, then press into the panko mixture until fully coated, and place on the baking sheet.
  6. Bake for 10 minutes, flip the chicken bites, and bake for an additional 10-15 minutes until cooked through.
  7. In a saucepan, heat grape seed oil and sauté onions and garlic until translucent.
  8. Add crushed tomatoes and bring to a simmer, then stir in fresh basil and cook for 2 more minutes.
  9. Serve the chicken parmesan bites with marinara sauce.
