Easy, Creamy White Bean Dip

Ingredients

  • ½ medium yellow onion
  • 2 cloves garlic
  • 1 540 ml can white kidney beans
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tsp minced onion
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp bouillon paste
  • 3 tbsp water
  • ½ cup cheddar cheese, grated
  • ¼ cup soft queso cheese
  • 3 tbsp chives, chopped
  • cup extra cheese, grated

Instructions

  1. Preheat the oven to 400°F and line a baking tray with parchment paper.
  2. Prepare an 8- or 9-inch casserole dish and set aside.
  3. In a food processor, combine all ingredients and blend until smooth.
  4. Adjust the flavor to taste, adding more water if the mixture is too thick.
  5. Transfer the mixture to the casserole dish.
  6. Bake for 20 minutes, placing the baking tray underneath.
  7. Remove from the oven and sprinkle extra grated cheese on top.
  8. Bake for an additional 10 minutes until golden brown.
  9. Broil for a couple of minutes if needed.
  10. Serve immediately with chopped chives and tortilla chips.
