Cashew Shrimp

Ingredients

The main ingredients

  • 2 tablespoons oil
  • 8 oz shrimp, shelled and deveined
  • 1 piece ginger, peeled and sliced into thin pieces, 1-inch
  • 2 oz snow peas
  • ¼ small carrot, peeled and sliced into diamond shape
  • ¼ cup canned straw mushrooms, sliced into halves
  • ½ cup roasted cashew nuts, rinsed

The marinade

  • 1 teaspoon egg white
  • ½ teaspoon cornstarch

The sauce

  • 1 tablespoon oyster sauce
  • 5 tablespoons water
  • ½ teaspoon shaoxing wine (optional)
  • ½ teaspoon sesame oil
  • ¼ teaspoon sugar
  • 3 dashes white pepper
  • 1 teaspoon cornstarch
  • 1 pinch salt

Instructions

  1. Marinate the shrimp with the marinade for 15 minutes.
  2. Combine all the sauce ingredients in a small bowl and stir to blend well.
  3. Heat a wok with 1 tablespoon of oil, add the marinated shrimp, and stir until half cooked.
  4. Remove the shrimp and clean the wok, then heat another tablespoon of oil.
  5. Stir-fry the sliced ginger until fragrant, then add the snow peas, carrot, mushrooms, and cashew nuts.
  6. Add the shrimp back to the wok along with the sauce and stir-fry until the shrimp is cooked through.
  7. If the sauce thickens too much, add a little water.
  8. Serve immediately with steamed rice.
