Instructions
- Marinate the shrimp with the marinade for 15 minutes.
- Combine all the sauce ingredients in a small bowl and stir to blend well.
- Heat a wok with 1 tablespoon of oil, add the marinated shrimp, and stir until half cooked.
- Remove the shrimp and clean the wok, then heat another tablespoon of oil.
- Stir-fry the sliced ginger until fragrant, then add the snow peas, carrot, mushrooms, and cashew nuts.
- Add the shrimp back to the wok along with the sauce and stir-fry until the shrimp is cooked through.
- If the sauce thickens too much, add a little water.
- Serve immediately with steamed rice.
