Ingredients

Main Ingredients

  • 2 tbsp olive oil
  • 1 yellow onion diced
  • 2 cloves garlic, minced
  • 3 tsp cumin
  • 1 tsp oregano
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tsp chili powder
  • ¼ tsp cayenne
  • 2 cans white beans, drained and rinsed
  • 2 lbs chicken breasts, raw
  • 4 cups chicken broth
  • 2 4oz cans green chiles
  • 1 can fire roasted tomatoes
  • 1 can corn, drained and rinsed
  • 1 lime juiced
  • ½ cup Greek yogurt

Toppings

  • to taste Greek yogurt
  • to taste cilantro
  • to taste cheddar cheese
  • to taste jalapeño
  • to taste lime
  • to taste tortilla chips

Instructions

  1. Sauté onions in olive oil until soft, then add garlic and spices.
  2. Mash 1 cup of beans in a separate bowl to thicken the soup.
  3. Combine broth, mashed beans, regular beans, green chiles, tomatoes, corn, and chicken in the pot.
  4. Bring to a boil, then reduce heat and simmer for 15-20 minutes until chicken is cooked through.
  5. Remove chicken, shred it, and return it to the pot along with lime juice and Greek yogurt.
  6. Stir everything together and serve with toppings.
