Instructions
- Sauté onions in olive oil until soft, then add garlic and spices.
- Mash 1 cup of beans in a separate bowl to thicken the soup.
- Combine broth, mashed beans, regular beans, green chiles, tomatoes, corn, and chicken in the pot.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes until chicken is cooked through.
- Remove chicken, shred it, and return it to the pot along with lime juice and Greek yogurt.
- Stir everything together and serve with toppings.
