Ingredients

The salmon

  • 2 filets salmon (skinless, thick cuts)

The spices

  • ½ teaspoon cinnamon
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ¾ teaspoon sugar (or brown sugar)
  • a pinch cayenne or smoked paprika

The cooking oil

  • 1 tablespoon oil for searing

The garnish

  • to taste orange zest

Instructions

  1. Preheat the oven to 350°F.
  2. Mix cinnamon, cumin, salt, sugar, and cayenne in a small bowl.
  3. Rub the spice mixture on both sides of the salmon.
  4. Heat oil in an oven-proof skillet over medium heat.
  5. Sear the salmon for 2-3 minutes on each side until golden.
  6. Transfer the skillet to the oven to finish cooking for 5 minutes or until desired doneness.
  7. Garnish with orange zest before serving.
