Evaporated Milk
Instructions
- Add milk to a wide heavy-bottom, non-stick pan.
- Bring the milk to a boil, then lower the heat to a simmer while stirring continuously.
- Break the film that forms on top to allow water to evaporate quickly.
- Simmer for about 1½ hours until the milk has reduced to about ⅓ of its original volume and appears thick and creamy.
- Sieve the milk using a fine strainer.
- Pour the milk into a mason jar and let it cool completely.
