  • 4 cups whole milk

Instructions

  1. Add milk to a wide heavy-bottom, non-stick pan.
  2. Bring the milk to a boil, then lower the heat to a simmer while stirring continuously.
  3. Break the film that forms on top to allow water to evaporate quickly.
  4. Simmer for about 1½ hours until the milk has reduced to about ⅓ of its original volume and appears thick and creamy.
  5. Sieve the milk using a fine strainer.
  6. Pour the milk into a mason jar and let it cool completely.
