Milk Jam

Ingredients

  • ½ cup pure cane or white granulated sugar
  • ½ unit vanilla bean, halved and scraped
  • 2 cups whole milk
  • ½ teaspoon baking soda

Instructions

  1. Mix the sugar and vanilla bean caviar in a bowl until well combined.
  2. In a medium to large saucepan, combine the whole milk, sugar/vanilla mixture, and baking soda.
  3. Cook the mixture over medium heat until it simmers, about 5 minutes.
  4. Reduce the heat to low and allow the mixture to simmer gently for about 1 hour, stirring occasionally.
  5. Once thickened and dark brown, remove from heat and strain through a fine-mesh sieve.
  6. Stir in a pinch of salt and store in an airtight container.
