Banana Jam

Ingredients

  • lbs peeled overripe bananas
  • cups granulated sugar
  • 2 tablespoons brown sugar
  • 3 tablespoons fresh lime juice
  • 2 tablespoons water
  • ½ teaspoon salt
  • 3 dashes ground cinnamon
  • 1 tablespoon rum (optional)

Instructions

  1. Mash the overripe bananas until chunky.
  2. Transfer the mashed bananas to a pot and simmer over low heat.
  3. Add the granulated sugar, brown sugar, lime juice, water, and salt, stirring to combine.
  4. Continue to simmer for about 10-15 minutes until the jam thickens slightly.
  5. Stir in the ground cinnamon and rum, if using.
  6. Remove from heat and let cool before transferring to an airtight container.
