Instructions
- Preheat the oven to 350°F and line a 9x13 inch baking dish with parchment paper.
- In a large mixing bowl, combine the cheerios and cashews.
- In a microwave-safe bowl, mix the honey, coconut oil, and brown sugar, and heat until melted and smooth.
- Stir in the baking soda, salt, and vanilla into the honey mixture.
- Pour the honey mixture over the cheerios and toss to combine.
- Spread the mixture evenly in the prepared baking dish.
- Bake for 25-35 minutes until the top is golden brown.
- Allow to cool completely for 2-4 hours before cutting into bars.
