Ingredients

  • 4 cups original cheerios
  • ¾ cup honey
  • ¼ cup coconut oil
  • 1 tablespoon brown sugar
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup roasted salted cashews

Instructions

  1. Preheat the oven to 350°F and line a 9x13 inch baking dish with parchment paper.
  2. In a large mixing bowl, combine the cheerios and cashews.
  3. In a microwave-safe bowl, mix the honey, coconut oil, and brown sugar, and heat until melted and smooth.
  4. Stir in the baking soda, salt, and vanilla into the honey mixture.
  5. Pour the honey mixture over the cheerios and toss to combine.
  6. Spread the mixture evenly in the prepared baking dish.
  7. Bake for 25-35 minutes until the top is golden brown.
  8. Allow to cool completely for 2-4 hours before cutting into bars.
