Broccoli and Cheese Stuffed Chicken

Instructions
- Preheat the oven to 350°F.
- In a small bowl, mix the egg, water, and a pinch of salt to create an egg wash.
- In another bowl, place the breadcrumbs.
- Slice the chicken breasts into thin cutlets, about 3 per breast half, and pound them thinner if desired.
- Cut each slice of cheese in half and place it in the center of each chicken cutlet, topping with broccoli.
- Wrap the chicken around the cheese and broccoli, securing with toothpicks and seasoning with salt.
- Dip the wrapped chicken in the egg wash, then coat with breadcrumbs.
- Spray a cookie sheet with oil, place the chicken on it, and lightly spray the chicken with oil.
- Bake for about 25 minutes until cooked through.
