Broccoli and Cheese Stuffed Chicken

Ingredients

The chicken

  • 3 pieces large chicken breast halves

The filling

  • 2 cups broccoli floret, cooked, chopped small
  • 5 slices reduced fat Swiss cheese

The coating

  • ¾ cup whole wheat seasoned bread crumbs
  • 1 large egg
  • 2 tsp water
  • a pinch salt

Instructions

  1. Preheat the oven to 350°F.
  2. In a small bowl, mix the egg, water, and a pinch of salt to create an egg wash.
  3. In another bowl, place the breadcrumbs.
  4. Slice the chicken breasts into thin cutlets, about 3 per breast half, and pound them thinner if desired.
  5. Cut each slice of cheese in half and place it in the center of each chicken cutlet, topping with broccoli.
  6. Wrap the chicken around the cheese and broccoli, securing with toothpicks and seasoning with salt.
  7. Dip the wrapped chicken in the egg wash, then coat with breadcrumbs.
  8. Spray a cookie sheet with oil, place the chicken on it, and lightly spray the chicken with oil.
  9. Bake for about 25 minutes until cooked through.
