Magic Broccoli and Carrot Salad

Ingredients

The salad

  • 4 cups broccoli, florets only, chopped
  • 3 large carrots, grated
  • 1 cup shredded red cabbage
  • 2 pieces green onions, sliced
  • 1 piece red apple, peel on, cored and diced
  • 1 cup sliced green olives
  • ½ cup raw hazelnuts, toasted and chopped
  • ½ cup organic raisins

The vinaigrette

  • 1 cup paleo mayo
  • ¼ cup apple cider vinegar
  • 2 tbsp fresh ginger root, grated
  • 1 tbsp salted herbs or more salt
  • ½ tsp Himalayan salt
  • ½ tsp freshly ground black pepper
  • ½ tsp Chinese 5 spice
  • ¼ tsp cayenne pepper

Instructions

  1. Prep all fruits and vegetables and combine them in a large mixing bowl with olives, raisins, and hazelnuts.
  2. Make the salad dressing by shaking all vinaigrette ingredients in a mason jar.
  3. Pour the dressing over the salad and mix well.
  4. Let the salad sit in the fridge for a couple of hours to allow flavors to meld.
  5. Serve and enjoy!
