Magic Broccoli and Carrot Salad

The salad

broccoli, florets only, chopped

shredded red cabbage

green onions, sliced

red apple, peel on, cored and diced

sliced green olives

raw hazelnuts, toasted and chopped

organic raisins
The vinaigrette

paleo mayo

apple cider vinegar

fresh ginger root, grated

salted herbs or more salt

Instructions
- Prep all fruits and vegetables and combine them in a large mixing bowl with olives, raisins, and hazelnuts.
- Make the salad dressing by shaking all vinaigrette ingredients in a mason jar.
- Pour the dressing over the salad and mix well.
- Let the salad sit in the fridge for a couple of hours to allow flavors to meld.
- Serve and enjoy!
