Instructions
- Preheat the oven to 350°F and prepare a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking soda, cornstarch, salt, and cinnamon.
- In a mixer, beat the butter and dark brown sugar until light and fluffy.
- Add the egg and vanilla to the butter mixture and mix until combined.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Stir in the butterscotch chips.
- Form tablespoon-sized balls of dough and roll them in brown sugar.
- Place the dough balls on the baking sheet, spaced 2 inches apart.
- Bake for 10 to 12 minutes until lightly browned around the edges.
- Let the cookies cool on the pan for 2 minutes before transferring to a wire rack.
