Ingredients

The cookie dough

  • cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cornstarch
  • ½ teaspoon salt
  • ¼ teaspoon ground cinnamon
  • ¾ cup unsalted butter
  • cups dark brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup butterscotch chips

For rolling

  • ½ cup extra dark brown sugar

Instructions

  1. Preheat the oven to 350°F and prepare a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, cornstarch, salt, and cinnamon.
  3. In a mixer, beat the butter and dark brown sugar until light and fluffy.
  4. Add the egg and vanilla to the butter mixture and mix until combined.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. Stir in the butterscotch chips.
  7. Form tablespoon-sized balls of dough and roll them in brown sugar.
  8. Place the dough balls on the baking sheet, spaced 2 inches apart.
  9. Bake for 10 to 12 minutes until lightly browned around the edges.
  10. Let the cookies cool on the pan for 2 minutes before transferring to a wire rack.
