Instructions
- Preheat the oven to 350°F and line two baking sheets with parchment paper.
- Melt the butter in a skillet over medium heat, swirling until it browns and smells nutty, then cool it to room temperature.
- In a bowl, whisk together flour, baking soda, salt, and cinnamon.
- In a stand mixer, beat the browned butter with brown and granulated sugar until creamy.
- Add eggs and vanilla to the butter mixture and mix until combined.
- Gradually mix in the dry ingredients until just combined, then stir in oats and butterscotch chips.
- Form the dough into balls and place them on the baking sheets, spacing them apart.
- Sprinkle with sea salt if desired and bake for 8-10 minutes until edges are slightly brown.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
