Ingredients

The cookie dough

  • 1 cup unsalted butter
  • cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • teaspoons vanilla extract
  • 3 cups old fashioned rolled oats
  • cups butterscotch chips

For sprinkling

Instructions

  1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
  2. Melt the butter in a skillet over medium heat, swirling until it browns and smells nutty, then cool it to room temperature.
  3. In a bowl, whisk together flour, baking soda, salt, and cinnamon.
  4. In a stand mixer, beat the browned butter with brown and granulated sugar until creamy.
  5. Add eggs and vanilla to the butter mixture and mix until combined.
  6. Gradually mix in the dry ingredients until just combined, then stir in oats and butterscotch chips.
  7. Form the dough into balls and place them on the baking sheets, spacing them apart.
  8. Sprinkle with sea salt if desired and bake for 8-10 minutes until edges are slightly brown.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
