Instructions
- Preheat the oven to 350°F and line a cookie sheet with parchment paper if desired.
- In a mixing bowl, cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy.
- Mix in the egg until well combined.
- Stir in the flour, baking powder, baking soda, and salt until just combined.
- Fold in the oats and butterscotch chips.
- Portion out 1-ounce (2 tablespoons) cookie dough balls onto the cookie sheet, leaving 3 inches between each.
- Bake on the middle rack for 9-11 minutes until the edges are golden and the centers appear slightly underdone.
- Remove from the oven and transfer to a cooling rack.
