Ingredients

  • ½ cup unsalted butter, softened at room temp
  • 6 tablespoons granulated sugar
  • 6 tablespoons light brown sugar
  • 1 large egg
  • 1 ¼ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon table salt
  • ¾ cup old-fashioned oats
  • ½ cup butterscotch chips

Instructions

  1. Preheat the oven to 350°F and line a cookie sheet with parchment paper if desired.
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy.
  3. Mix in the egg until well combined.
  4. Stir in the flour, baking powder, baking soda, and salt until just combined.
  5. Fold in the oats and butterscotch chips.
  6. Portion out 1-ounce (2 tablespoons) cookie dough balls onto the cookie sheet, leaving 3 inches between each.
  7. Bake on the middle rack for 9-11 minutes until the edges are golden and the centers appear slightly underdone.
  8. Remove from the oven and transfer to a cooling rack.
