Ingredients

The topping

  • cup shredded feta cheese
  • cup dried tomatoes, chopped
  • 2 tablespoons snipped fresh basil
  • 2 tablespoons snipped fresh Italian parsley
  • 1 clove garlic, minced
  • ¼ teaspoon freshly ground black pepper

The base

  • 10 slices whole wheat baguette
  • 2 roma tomatoes thinly sliced
  • 2 tablespoons olive oil, divided

Instructions

  1. Preheat the oven to 350°F.
  2. In a small bowl, combine feta cheese, dried tomatoes, basil, and parsley.
  3. In another bowl, mix olive oil, garlic, and pepper.
  4. Brush the oil mixture over the bread slices and place them on a baking sheet.
  5. Bake the bread for about 5 minutes until lightly toasted.
  6. Top the toasted bread with tomato slices and spoon the feta mixture on top.
  7. Serve immediately or broil for 1 to 2 minutes until the cheese is slightly melted.
