Ingredients

Cookies Base

  • 2 ¼ cup almond flour
  • cup coconut oil, melted
  • cup maple syrup
  • ¼ cup coconut sugar
  • 1 unit egg
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ cup chopped pecans
  • ¼ tsp sea salt

Maple Glaze

  • 1 cup powdered sugar
  • ½ tsp vanilla extract
  • 1 tsp maple syrup
  • 2 tbsp almond milk

Instructions

  1. 1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. 2. In a medium bowl, combine melted coconut oil, maple syrup, coconut sugar, vanilla extract, and egg, whisking until smooth.
  3. 3. Add almond flour, baking powder, and sea salt to the mixture and mix until just incorporated.
  4. 4. Fold in the chopped pecans, reserving some for topping.
  5. 5. Bake the cookies for 10-11 minutes.
  6. 6. Allow cookies to cool completely before frosting.
  7. 7. For the glaze, mix powdered sugar, vanilla extract, maple syrup, and almond milk until smooth.
  8. 8. Drizzle about 1 teaspoon of glaze on each cookie and sprinkle with reserved pecans if desired.
