Instructions
- 1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
- 2. In a medium bowl, combine melted coconut oil, maple syrup, coconut sugar, vanilla extract, and egg, whisking until smooth.
- 3. Add almond flour, baking powder, and sea salt to the mixture and mix until just incorporated.
- 4. Fold in the chopped pecans, reserving some for topping.
- 5. Bake the cookies for 10-11 minutes.
- 6. Allow cookies to cool completely before frosting.
- 7. For the glaze, mix powdered sugar, vanilla extract, maple syrup, and almond milk until smooth.
- 8. Drizzle about 1 teaspoon of glaze on each cookie and sprinkle with reserved pecans if desired.
