Ingredients

The chicken and vegetables

  • 1.25 lbs boneless skinless chicken breasts
  • 1 each bell pepper, cut into strips
  • 1 each onion, cut into thin half moons

The salsa

  • 1 14 oz jar salsa

Instructions

  1. Place all ingredients in the crockpot.
  2. Cook on low for 6-8 hours or on high for 3-4 hours.
  3. Thirty minutes before the cooking time is up, remove the chicken and shred it with two forks.
  4. Return the shredded chicken to the pot, mix it into the salsa, and let it cook for another 30 minutes.
  5. Serve and enjoy!
