Easy Lemon Dill Tofu

Ingredients

The tofu

  • 1 package extra-firm non-gmo tofu
  • 1 tsp cooking oil

The dressing

  • 1 clove garlic
  • 3 tbsp fresh lemon juice
  • 1 tbsp tahini
  • 1 tbsp dill pickle juice (or water)
  • ½ tbsp nutritional yeast (optional)
  • 1 tsp extra virgin olive oil
  • ¾ cup fresh dill weed
  • to taste Kosher salt and pepper

Instructions

  1. Press the tofu for about 25 minutes to drain excess water.
  2. Prepare the lemon dill dressing in a food processor.
  3. Preheat a skillet over high heat and add the cooking oil.
  4. Chop the tofu into small squares.
  5. Add the tofu to the hot skillet and cook for about 6 minutes, then flip and cook for another 6-8 minutes until golden brown.
  6. Remove the tofu from heat and combine it with the dressing in a bowl, stirring until well coated.
  7. Serve immediately on its own, in a wrap, on a salad, or over grains and vegetables.
