Ingredients

The pork and filling

  • 1 lb pork tenderloin, trimmed
  • ½ cup chopped dried figs OR dried cranberries
  • ½ cup crumbled blue cheese OR Gorgonzola
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon apple butter

For sealing

  • 1 item twine or toothpicks

Instructions

  1. Preheat the oven to 450°F and prepare a baking sheet with aluminum foil and cooking spray.
  2. Butterfly the pork tenderloin and pound it to ½ inch thickness.
  3. Spread the chosen fillings over the pork, leaving ½ inch around the edges.
  4. Roll the pork from the long side and secure it with twine or toothpicks.
  5. Sprinkle salt and pepper over the pork and place it on the baking sheet.
  6. Bake for 20 minutes, then brush apple butter over the top and bake for an additional 5 minutes.
  7. Let the pork stand for 10 minutes before removing twine or toothpicks and slicing.
