Reuben Stuffed Pork Tenderloin

Ingredients

The pork tenderloin

  • 18 ounce trimmed pork tenderloin
  • ½ teaspoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon coarse salt
  • ¼ teaspoon caraway seeds

The filling

  • 3 tablespoon Thousand Island dressing
  • 2 ounce thin sliced turkey pastrami
  • 2 ounce reduced fat Swiss cheese
  • ¼ cup sauerkraut, drained well

Instructions

  1. Preheat the oven to 425°F.
  2. Cut a lengthwise slit down the center of the tenderloin, being careful not to cut all the way through.
  3. Open the tenderloin and make another slit down the center of each half, then flatten to ¼-inch thickness.
  4. Spread Thousand Island dressing on one side of the pork.
  5. Layer pastrami, Swiss cheese, and sauerkraut along the center of the pork.
  6. Roll the pork up jelly-roll style and tie it at 2-inch intervals with kitchen string.
  7. Rub the pork with olive oil and season with garlic powder, salt, and caraway seeds.
  8. Place the pork on a rack in a baking pan and bake until the internal temperature reaches 160°F, about 35 minutes.
  9. Let it rest for 10 minutes before removing the string and slicing into 8 pieces.
