Reuben Stuffed Pork Tenderloin

The filling

Thousand Island dressing

thin sliced turkey pastrami

reduced fat Swiss cheese

sauerkraut, drained well
Instructions
- Preheat the oven to 425°F.
- Cut a lengthwise slit down the center of the tenderloin, being careful not to cut all the way through.
- Open the tenderloin and make another slit down the center of each half, then flatten to ¼-inch thickness.
- Spread Thousand Island dressing on one side of the pork.
- Layer pastrami, Swiss cheese, and sauerkraut along the center of the pork.
- Roll the pork up jelly-roll style and tie it at 2-inch intervals with kitchen string.
- Rub the pork with olive oil and season with garlic powder, salt, and caraway seeds.
- Place the pork on a rack in a baking pan and bake until the internal temperature reaches 160°F, about 35 minutes.
- Let it rest for 10 minutes before removing the string and slicing into 8 pieces.
